Au Gratin Potato Balls

    First encountered this style of potato in a gift package from Omaha Steaks and was blown away! Many have tried to replicate the recipe but can only come close. This recipe is chock-full of flavor and works great as a stand-alone side or slathered in gravy.
	Ingredients
			- 8 large russet potatoes
 - 8 ounces cream cheese
 - 8 ounces sour cream
 - 2 tablespoons soft butter
 - 1 ½ cups all-purpose flour (for coating)
 - ¾ teaspoon baking powder (for coating)
 - 1 cup ground parmesan cheese (for coating)
 - 1 cup Panko bread crumbs (for coating)
 - ¼ cup dried minced onion
 - Salt and pepper to taste
 - Two eggs (for egg wash)
 - 2 Tablespoons of milk (for egg wash)

Instructions
			- Boil potatoes (leaving somewhat firm), cool, peel and smash.
 - In a pie tin, mix thoroughly the parmesan cheese and Panko crumbs.
 - In another pie tin, combine flour and baking powder and mix thoroughly.
 - In a large bowl combine dried onion, sour cream, cream cheese, butter and seasonings.
 - Mix in smashed potatoes until well combined (leaving potato chunks is desirable). Salt and pepper mixture to taste.
 - Chill mixture in refrigerator for 30 minutes (to make handling easier).
 - Crack two eggs into a small bowl and add two tablespoons milk; blend thoroughly.
 - Flour your hands to reduce sticking while rolling the mixture into balls.
 - Use an ice cream scoop to spoon out chilled mixture and roll into 2 inch balls.
 - Roll the potato balls in flour, then in egg wash, then in the parmesan/Panko crumb mixture until well coated and place on a foil lined or nonstick baking sheet allowing approximately 2 inches between each.
 - If baking right away, bake in 400° F oven for 15 to 20 minutes until lightly browned.
 - If freezing for later use, place the cookie sheet in the freezer until frozen (so they won't stick together), then place them in freezer container/bag.
 
To cook the frozen potato balls
			- Do not thaw!
 - Place desired number of servings on a foil lined or nonstick baking sheet allowing approximately 2 inches between each.
 - Bake in 425° F oven for 25-30 minutes until lightly browned.
 
Notes
			- Makes 18, two-inch potato balls.
 - Variations: Add powdered Ranch Dressing mix to potato mixture or season flour to your liking.
